Salmon in Italia!

Buongiorno!

So, I made it safe and sound to Italy on Monday and on Tuesday my best friend Kim and I had a lazy day on the boat while some nice Italian men came and put on a new furler. We went grocery shopping on Monday afternoon, so we decided that we would tackle this week's recipe together on Tuesday night for dinner! Boy are we glad that we did!
First off, here is a quick picture of the galley (kitchen.)

I started off by chopping up and cooking down half an onion, since we didn't buy shallots. Then I added the garlic clove, salt, pepper, and just a bit of dried thyme (because that's what we had). After that, I pan fried the salmon, which was in super thin filets, and then set them aside.

Then we added the blueberries and a full tablespoon of balsamic because I LOVE balsamic and was more than okay with strong flavor. However, being that we are in Italy, it just seemed wrong that we were supposed to use water in the sauce. So we uncorked a bottle of red wine instead! Then I added a touch of lemon juice, and voila!








Here is the finished product (and the view isn't terrible either).








We didn't have any mint but the wine made the sauce. All the flavors came together really well and it was delicious! Clearly we enjoyed it!
